A Smoky Saturday with Lo & Slo @ Wild & Fired BBQ School in Derry: Talking Wood and Charcoal with Norm and Emily
Recently we had the smoky pleasure of visiting the renowned Lo & Slo BBQ School in Derry, a true haven for BBQ lovers who want to learn the art of fire and flavor. Lo & Slo is fast becoming a must-visit spot for anyone serious about mastering BBQ with wood and charcoal.
We were met by Norm and Emily, the passionate duo behind the smoke. Both are masters of wood-fired and charcoal cooking who shared their expertise on choosing the right hardwoods and Charcoal for that perfect depth of flavor.
Our trip happened to coincide with Wild and Fired BBQ School gaining the new ‘Green Outdoor Experience Accreditation’ award created by ICSA. Other cookery schools on the list by ICSA Include River Cottage and Gordon Ramsey. Well done guys.
The day was hands-on, with plenty of time to talk BBQ theory, but even more time to put it into practice. We learned how to manage fire, how to layer flavors with smoke, and why wood selection is just as important as the cut of meat. The smell alone was worth the trip.
By the end, we were full of both great food and inspiration, with a new appreciation for the craft.
